Eggless Spinach Muffin

Spinach muffin!!! I had a bunch of spinach sleeping in my fridge for a long time. It wasn’t more enough to make sambar or subzi and I was thinking what to make before it becomes spoiled.

When I told my husband that I am going to prepare a spinach muffin for an evening tea, he gave me puzzled look of what I am gonna make. But the moment I took it out of the oven, it was just finished in a minute 🙂 This is the first savory muffin I had ever tried and tasted too.. And I am happy with the result. It was very tasty that I am gonna prepare it again for a get-together.

Spinach Muffin

Ingredients:

Makes: 6 muffins

Spinach – 3/4 cup (chopped)

Cheddar cheese – 1/2 cup

Maida/ all purpose flour – 3/4 cup

Baking soda – 1/2 tsp

Butter – 3 tbsp

Milk – 1/2 cup

Yogurt – little less than 1/4 cup

salt – 1/4 tsp

Method: 

1. Pre heat the oven at 180C.

2. Place muffin cups in muffin tray and keep it ready.

3. Heat milk in a pan, add butter and allow it to melt. Remove from flame and allow it to cool.

4. Add yogurt to the cooled mixture and whisk it well.

5. In a bowl, add flour, salt, baking soda and mix well.

6. Add chopped spinach and cheese to the butter mixture and mix well.

7. Finally add the flour and gently mix well.

8. Now, pour the mixture into muffin cups.

9. Bake it for 35 mins until it turns golden brown at the top.

Your muffins are ready to enjoy with hot tea/ coffee 🙂

Basic muffin recipe

Baking is my new craze and I do it whenever I feel bored and want to try out something new. This muffin recipe is very simple and fool proof. This recipe can never go wrong at any cost. From this you can create any flavors of your choice.

Especially a muffin with hot tea/coffee is just divine for cold weather 🙂 Hope you enjoy it!!!

Muffin

Ingredients: 

Makes: 6 muffins

Egg – 1

Plain flour/ Maida – 100g

Oil – 2 tbsp

Milk – 60 ml

Caster Sugar – 50g

Baking powder – 1 tsp

Salt – 1/4 tsp

Vanilla essence – 1/2 tsp

Method:

1. Whisk egg and stir in milk and oil. Sift flour, sugar, baking powder and salt in a large bowl so that it gets mixed well.

2. Now add the egg,oil and milk mixture to the sifted ingredients and mix them well.Add vanilla essence at this stage and mix it. Do not overmix it. It’s okay if the batter is lumpy.

3. Meanwhile, pre-heat the oven 200 deg C. Arrange muffin cases in the muffin tray or grease it with oil.

4. Fill the muffin cases 2/3 full. Bake it in oven for 20 to 25 minutes until golden brown.
